QUINOA VERMICELLI

Ingredients -

- Quinoa vermicelli – 1 packet

- ½ cup chopped vegetables(mix of onion, bell peppers, cabbage, carrot and beans)

- 1 medium size tomato-chopped

- 1twig of curry leaves

- 1tsp of chana da nad urad dal

- ¼ tsp turmeric

- Salt to taste

- Green chilly- optional

- Finely chopped green coriander

- 3-4 tsp olive oil


Method -

1. Heat 1 tsp of oil in pan. Roast quinoa vermicelli until it turns golden brown in colour. Transfer to a plate and keep aside 2. Heat oil in a pan and add mustard seeds, when they pop, add cumin seeds, chana dal, urad dal, curry leaves and sauté well. 3. Add chopped onion, stir and fry. Add rest of the vegetables, sauté them. Add chopped tomato, green chillies and stir well. Add turmeric and mix well. Then pour 2 cups of water, salt and bring to boil. 4. Once it comes to a boil, add roasted vermicelli and salt. Mix well and allow it to cook on medium flame. 5. Later transfer to a serving bowl, garnish with green coriander and enjoy this delicious quinoa vermicelli
